The Tua Tua has a delicate, sweet smell of fresh kelp and toasted nori. The flavour of the raw clam is slightly oceanic with clean citrus notes. Cooked, the Tua Tua has a range of savoury characteristics, reminiscent of lightly smoked fish and Japanese Soy.
The number of Clams per kg can vary as is subject to availability of the Grades at the time of packing your order.

There are two species of Tuat Ta in New Zealand, one found in the North Island, and the other in the South. Tua Tua move up and down the beach (usually at night) when the tide is favourable, and burrow under the sand once the tide changes.
They are usually harvested when there is a very low tide. People feel for the shellfish with their feet, only grasping them with their hands when they have located a group.
Preparation: With a the delicate sweet flavour Tua Tua Clams are great for a broad range of preparations. They can be eaten raw or quickly warmed and served with your favourite sauce or a dressing.
Availability: Available year round. Please allow up to 2 days notice prior to when you are wanting delivery as they need to be harvested.
Shelf life: Best consumed on arrival or within 5 days from receiving product, discard any that are open..
Fish for your health: Clams are a lean source of protein, are rich in minerals, vitamins, and Omega- 3 fatty acids.
Suggested wines: For simple steamed clams, try a Sauvignon Blanc or a dry Rosé. For clams in cream sauce, try a mid-range white Burgundy or a medium-oaked Chardonnay. Clams in tomato sauce require an acidic Sauvignon Blanc.
