These fish are set aside to have the belly loin portioned out. It is sold complete, to be cut into its final form by the discerning seafood connoisseur.
Preparation: This belly loin comes with skin on and bone in, therefore some processing is required. Belly Loins are the most prized cut from our fatty fish, so is usually enjoyed raw as sashimi.
