Southern Kingfish, also known as Gemfish or Silver Kingfish has a medium textured, sweet tasting fillet. They have delicate white fillets that flake easily, with a high fat content. The fillets are excellent smoked and suitable for most cooking methods

Preparation: Pan fry or bake and serve with your favourite sauce such as a creamy watercress or pesto sauce.

Availability: Year round subject to catch.  The main season is February to July.

Shelf life: Best consumed on arrival or within 3 days from receiving product.

Fish for your health: White fleshed fish is traditionally high in protein and low in fat. However, all fish provide an excellent source of Omega 3, an essential fatty acid which helps in lowering blood cholesterol and maintaining a healthy circulatory system.

Suggested winesServe with a medium bodied white wine such as white Semillon, Dry Riesling or Pinto Gris.
