Skate is considered a delicacy. It's flesh has a low to medium oil content and is tender, firm and delicate without being fragile like flounder.
Skate is best served grilled, fried, poached or baked.
Skate are very distinctive, with flattened, wing-like bodies, and occur all around New Zealand from coastal waters to depths of about 200m.
Preparation: Try poaching skate in liquid made of water, wine vinegar, a thinly sliced small onion, a bay leaf, parsley and fresh lemon, served with brown butter and capers. Skate wings shallow fry nicely, coat in seasoned flour using spices such as Cajun or smokey paprika and cook in hot oil for 2 minutes each side,.
