One side of salmon may vary in size from 800g to 1.6kg depending on what size fish it is cut from - price is per kg. These fillets are skin on pin bone out.
Fresh sashimi grade Salmon Side, skin on, de scaled, pin bone out. Mt Cook Alpine Salmon has been specifically selected to meet the sashimi grade. Fillets are ready to be cut into sashimi. Alternatively fillets can be portioned and cooked.

Constant swimming against fast, glacier fed canals keeps Freshwater King Salmon healthy and fit; with minimal stored fats. Instead, they store most of their energy as readily accessible intramuscular oil.
These traits are visible in the in the fine marbling and silky texture of their flesh. It’s this unique balance of fats and how they’re stored that lends itself to freezing. The happy result? The convenience of a frozen product, without compromising on taste or texture.

Salmon for your health: Salmon is very low in saturated fat and a good source of protein. It's also one of the best sources of vitamin B12. It's also bursting in potassium and other nutrients like iron and vitamin D.
Suggested Wines: As salmon is quite a meaty fish, if you grill or char it you can pair it with a red. Pinot Noir is a good match. If you prefer a white try a dry Pinot Gris. A fruity Pinot Noir is also a good wine match with Japanese style dishes such as salmon teriyaki.

In this unique landscape we operate our hatchery, ensuring great care and responsibility are there right from the very beginning. This inspiring habitat is home to our Freshwater King Salmon. Born to swim they cover the equivalent of a half marathon everyday revelling in the swift flowing currents.
We prefer to feed our fish by hand. It's our chance to observe and respond to their needs through the growing cycle and the changing seasons. All feed is sustainable and certified GMO free.
