While Octopus might be less common in NZ, it is easily enjoyed with similar care that you would give to any other meat.

The flavour and texture that it takes on when cooked make it a delicious and versatile ingredient.

 

Preparation: First clean by separating head and tentacles, removing the beak and eyes, rinse thoroughly.  Tenderise by poaching in simmering water or other liquid for 45 minutes to over an hour depending on the size.  After cooling you can use the octopus whole or slice into pieces for further cooking such as grilling or pan-frying.

Availability: Available year round while stocks last.

Shelf life: 24 months from production.  See best before date on carton.
