Hoki are found all around New Zealand, with major concentrations in Cook Strait, the west coast of the South Island and the Chatham Rise. They have an easily recognisable long, thin body with a tapering tail fringed by dorsal and anal fins. The eyes and jaws are large. The teeth small and sharp.
Preparation: Hoki is most suited for use in fish cakes, pies, curry or chowders. For crumbed or battered dishes we recommend you use frozen fillets as as the fillets do flake easily.
