Hake throats come from under the "chin" of the hake, between the jaw.
It is heart-shaped, and is soft with a gelatinous texture in the middle, and a mild and sweet flavour.
These throats are skin on and boneless.
Preparation: Hake throats are used in many traditional dishes and are often prepared with some crushed cloves of garlic with parsley and olive oil in a clay casserole, fried lightly without browning and adding salt.
Availability: Available year round while stocks last.
Shelf life: Best consumed on arrival or within 3 days from receiving product if defrosted.
