Trumpeter's flesh is firm, delicate in flavour and whitens when cooking. Trumpeter fillets have a firm flesh and are suitable for most cooking methods.
Trumpeter are found at depths of 20 -200m in the eastern Bay of Plenty and south of the Cook Strait, and also along the coast of Otago and Stewart Island.
Preparation: Best cooked using dry methods, such as grilling, shallow frying or baking.
Availability: Available year round subject to catch.
Shelf life: Best consumed on arrival or within 3 days from receiving product.
