Butterfish has medium textured, succulent flesh with high iodine content and is suited to most cooking methods.

Butterfish have a very clean, delicate flavour, translucent flesh and ability to flake well, the fillets are medium textured, very succulent flesh with high iodine content.  They are found only around the New Zealand coast, and are widespread, feeding on kelp beds over shallow rocky outcrops. They are rarely found at depths greater than 15 metres. 

Preparation:  Butterfish is suited to most cooking methods, try it baked, marinated, poached, smoked, grilled or fried.

Shelf life: Best consumed on arrival or within 3 days from receiving product.
