Snapper Fillets Skin On Boneless per 500g/Fresh
Snapper fillets are slightly firm, and flake wonderfully when cooked.
They are known for their sweet flavour, and the fillets can be enjoyed cooked a multitude of ways, but is most often pan fried, kept simple to let the fillet flavour shine.
Snapper are most common around the North Island and upper South Island, especially in Tasman Bay. The species is one of the largest and most valuable coastal fisheries in NZ.
They can reach up to 60 years old and occupy a variety of habitats, from reefs to mud bottoms. Interestingly, their habitat dictates their colour. Snapper found near reefs and seaweeds tend to be a red bronze, whereas snapper from muddy harbours tend to be pale pink. They are usually caught by longline or trawling.
Preparation: Snapper lends itself to many fish recipes, but is mosty often pan fried with simple flavours that let the fillet flavour shine.
Availability: May to September subject to catch.
Shelf life: Best consumed on arrival or within 3 days from receiving product.
