Albacore Tuna have a medium to firm steak-like texture and large moist flakes with a medium oil content.
Preparation: The loins are suitable for many preparations on and off the grill, in the oven and even as sashimi. Albacore is often smoked. Care must be taken to avoid over cooking.
Availability: The fresh NZ Albacore Season is from March to August approximately. Frozen stock is available year round while stocks last.
Shelf life: Best consumed on arrival or within 3 days of receiving product.
