Preparation: Soft Shell Crab are normally deep fried whole, and eaten whole. Before deep frying lightly dust in potato starch, rice flour or plain flour. Can also be used in a burger, salad, Tacos and even Sushi.
Availability: Available year round.
Suggested wines: Most white wine varieties are well suited to crab. Try a fruity Chardonnay, herbaceous semillon, or a light sauvignon blanc or pinot gris.
