Scallops have a fan-shaped bivalve shell, with deep ridges that radiate from the hinge. The flesh is white and the roe is usually bright orange.
The Coromandel Scallops are sold with the Roe on.
Preparation: Scallops are extremely versatile, they can be eaten raw, crumbed and deep fried, pan fried or use in any seafood dish. Be careful not to overcook as you will end up with a harsh and rubbery scallop.
Availability: Fresh Coromandel Scallop season is approximately August - November.
Shelf life: Best consumed on arrival or within 3 days from receiving product..
