The Leatherjacket has a tough leathery skin and a distinctive retractable dorsal spine, which can give the appearance of unicorn style horn. Leatherjacket are found around the coast of New Zealand up to 100m deep. Found msotly in rocky and reefy areas.
Leatherjacket is usually sold headed, gutted and skinned to produce a portion-sized serving.
