Elephant Fish have firm white flesh with a low oil content. It is also known as Silver Trumpeter. The fillets are perfect for pan frying or baking in the oven.
Elephant Fish also known as Silver Trumpeter are a close relation to the shark family. They are mainly found on the east coast of the South Island to depths of 200 metres.
The white flesh is firm and has a low oil content and is similar to that of groper (hapuku).
Preparation: The fillets are perfect for pan frying or baking in the oven but would suit most cooking methods. Like shark the fillets may need a soak in fresh water to remove any potential slight ammonia taste.
