NZ Crayfish are a delicacy - The ultimate Seafood Treat enjoyed by many and admired by most connoisseurs.

They have clean white flesh and a strong gamey taste, and, when prepared properly, are succulent and full of flavour. 

Grade AA crayfish weigh approximately 400g - 500g each. 



Crayfish, otherwise known as rock lobsters, are abundant around New Zealand and Chatham Islands rocky coastal waters. They are harvested throughout the year.

The meat is firm with a medium sweet taste, and retains its shape in most styles of cooking. They are found throughout New Zealand and Chatham Islands' coastal waters.

Preparation: - the best way to prepare it is by boiling, steaming or on the barbeque.  Be careful not too overcook to prevent the flesh being dry, tough and tasteless.

Availability: Available year round subject to catch and availability.

Shelf life: Best consumed on arrival.

Suggested wines: Most white wine varieties are well suited to crayfish. Try a fruity Chardonnay, herbaceous semillon, or a light sauvignon blanc or pinot gris.
