Brill have delicate, moist, apricot coloured flesh that whitens when cooked.

Brill are large, oval-shaped flatfish belonging to the flatfish family. They are found in shallower waters around the coast of New Zealand often inhabit sandy areas in shallow waters of depths from 30-100 meters. They are often caught as a by-catch off the West Coast of the South Island.

Preparation: Brill is ideal Pan Fried or Baked with your favourite sauce or seasoning.
