Knobbed Whelk (Austrofusus glans).
Whelks/sea snails are caught in baited pots. Usually caught as one uniform size of around 65-70 pieces per kg.
Preparation: They can be cooked either in boiling salt water for 5-8 minutes (the flesh is easily removed with a small fork) or cooked in a wok with ginger, spring onion and black bean sauce.
Suggested wines: Most white wine varieties are well suited to whelks/sea snails. Try a fruity Chardonnay, herbaceous semillon, or a light sauvignon blanc or pinot gris.
