Turbot are large, oval-shaped flatfish. Belonging to the flounder family, they are brownish-green with a whitish underside. Their distinctive jaw extends as a hook.
Usually found in shallow water, Turbot are caught year-round in New Zealand, mainly along the west coasts of both islands.

Suggested wines: A fruity Chardonnay, will add an element of citrus and round out the flavour nicely. A medium-bodied Sauvignon Blanc will enhance the fish like a wedge of lemon and can offer good complementary flavours if you go with a herbacious variety.
