Our Toothfish comes from the Ross Dependency – New Zealand’s claimed territory in Antarctica. It is caught under strict supervision of a world convention known as CCAMLR and under fish quotas issued by that world body. It is sustainably fished to a scientific programme managed by CCAMLR in Hobart, Australia.
Toothfish is one of the best eating white fish available. The skin is black and the flesh white with no pin bones.
Toothfish is the fish of choice in many of the leading restaurants in Tokyo and New York.
