Solander King Fish has been specifically selected to meet the high standard required for sashimi grade.  Fillets have been trimmed, tail ends removed and portioned ready to be cut into sashimi.  Each portion has been blast frozen to -60c and vacuum packed to ensure colour and texture is preserved to the highest level.  Product will arrive thawing and should be transferred to the chillier to complete the process before cutting.

Details

King Fish are predominantly an open-water fish, but can be found in shallow bays, harbours and estuaries looking for food. They tend to be in schools when they are younger, while older King Fish are more solitary.

They are commonly found in coastal waters around the North Island, and northern South Island. The average length of a King Fish is 60-120cm, and can weigh up to 60kg.

Availability: Available year round.

Shelf life: Best consumed on arrival or within 3 days from receiving product.

Fish for your health: White fleshed fish is traditionally high in protein and low in fat. However, all fish provide an excellent source of Omega 3, an essential fatty acid which helps in lowering blood cholesterol and maintaining a healthy circulatory system.

Suggested wines: A fruity Chardonnay, will add an element of citrus and round out the flavour nicely. A medium-bodied Sauvignon Blanc will enhance the fish like a wedge of lemon and can offer good complementary flavours if you go with a herbacious variety.
