Karitane Crayfish (or Rocklobster) (Karitane concession)
Karitane concession: Allows undersize Crays to be taken from this area only, a limited amount
of tonnes each year. Reason for the concession is to to allow the local community to access the
fishery before it marches up the coast. Measurement is of the actual tail length rather than the
width. Min Tail length 127.5mm.
All buyers must be advised: Crayfish must be kept in their sealed bags until final consumption.

Preparation: How to Cook Crayfish
Availability: Available from approximately June to November.
Suggested wines: Most white wine varieties are well suited to crayfish. Try a fruity Chardonnay, herbaceous semillon, or a light sauvignon blanc or pinot gris.
