John Dory is an edible deep sea fish with a slender, oval shaped body. They have a distinctive dark blue spot ringed with white in the centre of each side. This is used as a protective mechanism, flashing an 'evil-eye' if danger approaches.
It is a solitary fish that can be found in a range of habitats, from reefs, to sand, and mud bottoms. Due to their solitary nature, they are often caught in mixed catches of Snapper and Tarakihi.
Preparation: The flesh is pale, with a medium to firm texture. John Dory fillets can be boned very easily.

Fish for your health: White fleshed fish is traditionally high in protein and low in fat. However, all fish provide an excellent source of Omega 3, an essential fatty acid which helps in lowering blood cholesterol and maintaining a healthy circulatory system.
Suggested wines: A fruity Chardonnay, will add an element of citrus and round out the flavour nicely. A medium-bodied Sauvignon Blanc will enhance the fish like a wedge of lemon and can offer good complementary flavours if you go with a herbacious variety.
