Paua have been shucked, gutted and snap frozen whole and then vacuum packed (paua are approximately 150gm each after processing). They are ready to be cooked as whole steaks or sliced and fried with your favourite accompaniments.

The abalone or paua trim is frozen and once defrosted is ready to use for making your own paua patties or other dishes.

The Kina is sought after for it's delicate, smooth, buttery roe. The male roe is silkier, whereas the female roe is slightly more grainy.

Cockles have a delicate cream flesh with a low oil content. The meat is small in proportion to shell weight. 

Scallops have a fan-shaped bivalve shell, with deep ridges that radiate from the hinge. The flesh is white and the roe is usually bright orange. (Seasonal Aug - Jan)
