Cockle Recipe ideas

Cockles are a beautiful simple shellfish. All they require is a quick steaming and they are ready to eat as is. There is nothing quite like eating a pot of hot steaming cockles accompanied by a cold beer.

Steamed Cockles with Lemon and Bee

Simply place 2cms of water in a large pot, sea water if you have it, or add a pinch of salt, cover with lid and bring to the boil. Rinse cockles under running water to wash off any sand. Add to boiling water, no more than ½ a pot full at once. Cover and steam for 5mins or when open, then remove. Place in bowls and serve with lemon wedges and bottles of beer.

Cockles with Cider, Cream and Thyme

Ingredients:
1 x 350ml bottle of cider
½ pint cream
2kg fresh cockles in shell
1 tablespoon fresh chopped thyme

Add cider and cream to wok or large pot, bring to boil, add cockles, cover and steam until just open, add fresh thyme. Place cockles in a bowl and spoon cider and cream over top.

Cockles & Mussels with Chilli, Garlic, Coriander and Rice

Ingredients:
2 x fresh or dried red chilli
2 cloves garlic
Oil for cooking
1 ½ glasses white wine
2kg fresh cockles in shell
1kg mussels fresh in shell (optional)
½ cub fresh coriander chopped
Lemon wedges
1 cup rice

Cook rice. While rice is cooking heat wok add oil, chillies and garlic, brown for 1min, and then add wine. Cover and bring to boil. Add all shellfish, cover and steam for approx 5mins, stirring until open. Add coriander. Take large flat bowls, place rice in bottom and spoon shellfish and juices into bowls, add extra coriander on top and lemon wedges.
